Elise started Elysian Fields Farm in 2001 after completing a degree in International Development and working two season's on CSA farms. Aside from farming, life is consumed by family, a husband and two small children. Free time? What is that… Elise manages the spring and summer seasons on the farm including the Spring/Summer CSA, the master planting and seeding plan, planning the work day, going to the market and managing employees.
Beth grew up in a rural farming community in the Midwest, after being a statistician at a community college for a few years, became actively engaged in farming around the age of 30. Worked on an organic vegetable farm in Illinois then moved to NC to work for Elise in 2008. Five years later after buying land near Elise’s farm, Beth and Elise decided to become business partners and farm both properties.
During Winter at farmers markets, they are accustomed to stand out with an impressive variety of greens, some of which are not commonly seen during this time of year. They now offer experiences at the farm from December to March because they feel that the public is interested in learning more about their innovative agricultural practices which enable them to grow beautiful and nutritious food despite harsh weather conditions.
